Our Park Adventures- Day 2

Well, today the weather definitely wasn't as warm, but we had fun. The park we chose was great! It's a fairly new park and it's less than a mile away--- How did I not know about this one before?!! And another great bonus-- there was NO SAND!! After goofing around on the playground, we played frisbee and went for a walk. I'm really enjoying the exercise. I was given the jogging stroller last fall, and it's been really nice to have.... I think we'll make those walks a regular everyday thing this spring.

Banana Crumb Muffins

I made these muffins last week and they were incredible! Definitely the best banana muffins I've ever had. I had some bananas in the freezer that I needed to use up, so I looked on allrecipes.com and found
this recipe that was rated 4.78 out of 5 stars by 4562 people. I used whole wheat pastry flour instead of all-purpose flour and it worked great.


1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

1. Preheat oven to 375 degrees F. Lightly grease 10 muffin cups (I did 12), or line with muffin papers.

2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.

4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Our Park Adventures- Day 1

Today was a beautiful day for the park. My hubby had just gotten back from an appointment, so he decided to join us.

We spent an hour there today, playing on the swings and the merry-go-round, and kicking the soccer ball around. After such a rainy weekend, we just soaked in the sun today. We also went for a 1/2 hour walk around the neighborhood there while my son rode his scooter. It was great for us all to spend some time together-- I was glad my hubby was able to join us today.

Our Park Adventures

In my quest to spend more one-on-one "fun" time with my eight-year-old, I've decided to take the boys to a different park each day this week... after school, of course, haha. To keep me accountable, I will post about our adventures each evening. We'll hop in the car, drive to a little-known park within a few miles away, have some fun together, and probably go for a walk around the area with the jog stroller. It'll be fun to see different parks we've never been to. Check back each day to follow along with our adventures!

Changeling- A Movie Recommendation

Have you seen the movie, Changeling, yet? My hubby & I watched it this weekend and it was very good. I would recommend it, if you like that type of movie. It was very intense. And it did have some language in it, but not very much. It's supposed to be based on a true story. You can find out more about it here.

I was reading Money Saving Mom's post here about a rebate you can combine with the Huggies diaper deal from last week. One thing I really like about requesting the free samples is that the companies usually send really great coupons along with the sample. A lot of times it's for $1.00 off with an expiration date 6-9 months away. So if you haven't taken advantage of any of the free samples yet, go ahead and give it a try, especially if it's a product you normally buy anyway. Have I mentioned how much I LOVE Walgreens??? Here are all the deals I got this week. I actually made two transactions because it turns out "my" Walgreens doesn't refill ink. So I had to go to a different Walgreens store for that. But I was able to take advantage of several of the deals twice by doing two transactions.

So I spent $23.83. I received $7.00 back in Register Rewards for the next time I shop, and I will get back $13.98 from both Ensure rebates, which brings my total to $2.85.

Safeway & Albertson's
Safeway had a $10 off coupon, if you spend $50. I used one for their meat sale-- Beef roasts were $1.89 per pound. After the $10 off coupon, it came out to about $1.55 per pound. We slice them up and use them for steaks-- hubby's a meat & potatoes man. I also discovered that Albertson's will take ANY coupon from ANY store, except clothing stores. They even take Rite Aid coupons. So I used another one of Safeway's $10 off $50 coupon at Albertson's & stocked up on their 85% ground beef, which was $1.99 per pound. After the $10 off coupon, this came out to $1.60 per pound!

No Menu This Month

This month I feel like being spontaneous with our meals. I'm trying to use up some things in my freezer and pantry, and it's easiest for me to do this by just planning my menu a few days at a time. I'm also trying not to buy very many groceries this month other than produce and dairy. I just stocked up on meat, so we're good there. I like that you can go to a website like www.allrecipes.com and enter in the ingredients you have and it will search the recipes based on what you have. I've come across some great recipes by doing that. I'm hoping to post some of the recipes that our family likes this month as well.
