Monday
Breakfast: Bagels & Cream Cheese
Lunch: Tuna
Dinner: Pineapple Chicken & Rice, Veggie Sticks

Tuesday
Breakfast: Cereal, Smoothies

Lunch: Sandwiches
Dinner: Split Pea & Bacon Soup, Salad, Rolls

Wednesday (My son's 8th birthday!)
His menu request for the day:
Breakfast: Oven Pancakes
Lunch: Mac & Cheese
Dinner: Tacos

Thursday
Breakfast: Bagels & Cream Cheese, Smoothies
Lunch: Homemade Pizza
Dinner: Tuna Noodle Casserole, Corn, Veggie Sticks

Friday
Breakfast: Oatmeal
Lunch: Egg Sandwiches
Dinner: Lentils & Rice, Salad, Rolls

Saturday
Breakfast: Crepes
Lunch: Chicken & Rice Soup
Dinner: Mexican-Style Goulash, Veggie Sticks

Slow Cooker Beef Barley Soup

It must be winter as we've been having lots of soups and stews lately. This is a new one I added to our rotation last fall. I love that I can put it in the slow cooker in the morning and not have to think about dinner for the rest of the day.

Ingredients:
2 pounds lean stew meat (cut into small pieces)
1 small green bell pepper, chopped
3/4 cup chopped onion
2 carrots, diced
16 oz canned or frozen corn
2/3 cup uncooked barley
1 1/2 cups water
1 tsp salt
1 tbs sugar
1/2 tsp dried basil
1/2 tsp oregano
1/2 tsp thyme
1/2 tsp black pepper
2 cans (14 1/2 oz each) beef broth
1 can (14 1/2 oz) diced tomatoes
1 can (8 oz) tomato sauce

Directions:
Mix all ingredients in a 3 1/2 to 6-quart slow cooker. Cover and cook on low setting 8 to 9 hours or until vegetables and barley are tender. For faster cooking, set on high and cook for 4 to 5 hours.

So Very Blessed

I am so very blessed by these two...

It's been so great to see how well my oldest son has adjusted to his little brother. He loves him so much and just loves to make him smile. He literally can't wait until he'll be moving around and can play more with him. And baby's face just lights up when he sees his brother. It is so neat to see. I'm trying to enjoy each passing day as I know they grow way too fast. It's hard to believe my baby is seven months old already! But I am feeling very blessed...

Free Movie Monday


It's been a few weeks since we've even gotten a redbox video. Besides, our library is really great about getting in a lot of the new releases, so we watched a few of those on Valentine's Day. Well, my hubby was actually so tired, he slept through both of them! He's been working so hard lately. GhostTown was a really good one that I watched. It was pretty funny.

Menu Plan Monday Feb 16-21


While I have my menu planned out each week, it is just that... a plan. It is always subject to change depending on what works best for our family. Sometimes I switch meals around, or I have something I need to use up, or I just don't feel like making what's on the menu.

Quite a few of the meals I've been making lately have made large enough amounts that I've been able to get several meals out of them. Which has been so nice since then I don't have to cook every night. Yay! So several meals keep getting bumped to a different week... one of those is the homemade pizza that we are having tonight. As far as I know, that is still what we're having tonight, though! lol

Here's what's on the menu for this week...

Lunch: Tuna
Dinner: Homemade Pepperoni Pizza, Salad

Tuesday
Breakfast: Cereal
Lunch: Ham & Cheese Sandwiches

Dinner: Spaghetti, Breadsticks, Salad

Dinner: Turkey Enchiladas, Corn, Veggie Sticks

Breakfast: Oven Pancakes
Lunch: PB & J
Dinner: Steak, Baked Potatoes, Broccoli Bake

Breakfast: Potatoes & Eggs
Lunch: Sandwiches
Dinner: Crockpot Chili & Cornbread, Salad

Baked Beef Stew

I believe I got this recipe from a Taste of Home cookbook. This is my favorite beef stew recipe ever. The ingredients that make it so good (in my opinion) are the tapioca and the peas. The peas actually make it sweeter. You could probably easily do it in the slow cooker, although I just never have.

Ingredients:
1 can (14-1/2 oz) diced tomatoes, undrained
3/4 cup water
1/4 cup beef broth
3 tbs quick-cooking tapioca
2 tsp sugar
1-1/2 tsp seasoned salt
1/2 tsp dried marjoram
1/2 tsp pepper
2 pounds lean beef stew meat, cut into 1-inch cubes
5 small red (or any) potatoes, quartered
4 medium carrots, cut into chunks
2 celery ribs, cut into chunks
1 medium onion, cut into chunks
1/2 cup soft bread crumbs
1 cup frozen peas, thawed

Directions:
In a large bowl, combine the tomatoes, water, broth, tapioca, sugar, seasoned salt, marjoram and pepper. Let stand for 15 minutes. Add the meat, potatoes, carrots, celery, onion and bread crumbs.

Pour into two greased 9x13 inch baking dishes. Cover and bake at 375 degrees for 1-1/4 hours. Uncover; stir in peas. Bake 15-20 minutes longer or until meat and vegetables are tender. Makes 5-8 servings.

Mexican Beef Skillet

This is a quick and easy recipe that my family enjoys. I found it in a magazine, and I've been making it for several years.

Ingredients:
6 oz macaroni, uncooked
1 pound ground beef
1 small green bell pepper, chopped
1 medium onion, chopped
1 clove garlic, minced
1 can (14-1/2 oz) diced tomatoes, undrained
8 oz picante sauce, or salsa
1 cup frozen corn
1/2 cup sliced olives
1/2 tsp salt
1 cup shredded cheese
corn chips
sour cream
sliced green onions
mexican seasoning (optional)

Directions:
Prepare macaroni according to package directions; drain. In large skillet, combine beef, bell pepper, onion & garlic. Cook until beef is browned and vegetables are tender; drain. Stir in tomatoes, picante sauce, corn, olives, and salt. I have the Mexican Ole' seasoning from Megan's Pantry that I like to add in to spice it up. Or, you could use chili powder, etc. Add macaroni; mix well. Heat thoroughly. Stir in cheese. Serve with corn chips, sour cream, green onions, and more cheese, if desired. Makes 4-6 servings. Enjoy!
