Menu Plan Monday


This week, I am trying out several recipes that my friends have posted. I've included the links. At the end of the week, we're having a garage sale at a friend's house, so it will be nice to have a little break from cooking.

Cornbread Recipes

I really like cornbread, so I thought I'd post three of my favorite cornbread recipes. They're all quite different from each other. You don't have to bake your cornbread in the oven. I make my cornbread in the bread maker sometimes and it works great. You can also just pour the batter on top of your chili in the crockpot and it will cook in there. So easy!

Golden Sweet Cornbread
My family told me this is the best cornbread they've ever had. (Christi- this is the cornbread we brought your family-- sorry it's taken me so long to post the recipe!) This is a recipe from allrecipes.com, but I've made some changes to it, based on the reviews.

Ingredients:

1 cup flour (I used whole-wheat pastry flour)
1 cup yellow cornmeal
1/2 cup sugar
1 1/8 tsp salt
1/2 tsp vanilla
3 1/2 tsp baking powder
1 egg
1 cup milk
1/3 cup (+ 1 tbsp) vegetable oil

Directions:

1. Preheat oven to 400 degrees. Lightly grease an 8 or 9 inch baking pan.

2. In a large bowl, combine flour, cornmeal, sugar, salt and baking powder. Stir in egg, milk and oil until well combined. Pour batter into prepared pan.

3. Bake in preheated oven for 20-25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Homesteader Cornbread
This cornbread is possibly my favorite. It is from allrecipes.com as well.

Ingredients:
1 1/2 cups cornmeal
2 1/2 cups milk
2 cups flour (I used whole-wheat pastry flour)
1 tbsp baking powder
1 tsp salt
2/3 cup sugar
2 eggs
1/2 cup oil

Directions:
1. Preheat oven to 400 degrees. In a small bowl, combine cornmeal and milk; let stand for 5 minutes. Grease a 9x13 inch baking pan.

2. In a large bowl, whisk together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs and oil until smooth. Pour batter into prepared pan.

3. Bake in preheated oven for 30 to 35 minutes or until a knife inserted in the center of the cornbread comes out clean. Yield: 6 servings.

Rebeca's Cornbread
I got this recipe from my friend, Rebeca. It takes a little planning ahead, but is very light and fluffy.

Place in a blender:
1 cup buttermilk, sour milk or kefir
1/4 cup melted butter or oil (or 2 tbsp of each)
3 tbsp honey
2/3 cup cornmeal
2/3 cup brown rice

In blender, blend on high speed until the rice is ground fine. Let batter stand in blender overnight or at least 7 hours. Letting it stand longer is supposed to help make the whole grains more digestible.

Add:
2 eggs and blend

Mix in thoroughly, but briefly:
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt

Pour batter immediately into a greased 8 or 9 inch pan and bake at 375 degrees for 20-25 minutes.

Crockpot Chicken Enchilada Casserole


I made this recipe last weekend and it was a change of pace from the usual soups and stews I tend to normally make in the slow cooker.
Ingredients:
1 onion, chopped
1 garlic clove, minced
1 tbsp oil
10-oz can enchilada sauce
8-oz can tomato sauce
salt to taste
pepper to taste
6 corn tortillas
3 boneless chicken-breast halves, cooked & cubed
15-oz can beans (I used black beans)
15-oz can corn (I used frozen)
1/2 lb cheddar cheese, grated
2 1/4-oz can sliced black olives, drained

Directions:
  • Saute onion and garlic in oil in saucepan. Stir in enchilada sauce and tomato sauce. Season with salt and pepper.

  • Place two tortillas in bottom of slow cooker. Layer one-third of each: chicken, sauce mixture, beans, corn, cheese, and olives. Repeat layers 2 more times.

  • Cover. Cook on low 6-8 hours.

What A Month!

This blog is way overdue in being updated, so this week I will attempt at catching you up on this past month. First of all... WE'RE PREGNANT!! We found out about a month ago. I'm about 12 weeks along now and due in November!

We were very surprised, considering how long it took to get pregnant last time (my boys are seven years apart). So with that combined with our ages, my irregular cycles, and the fact that I have endometriosis (can make it harder to get pregnant sometimes), we decided to let God be in control of our family planning this time. No more birth control for us.

We are super excited to have another baby join our family and it will be especially fun to have them closer together. The younger two will be about 16 months apart (my baby is 10 months old now). So... here I am still breastfeeding (planning to wean at one year) and growing a baby as well. Instead of eating for two, I'm actually eating for three! My doctor says that is fine as long as I'm getting enough calcium and other nutrients.

So this past month, I've been really trying to focus on eating enough and taking care of myself, while trying to keep up with all the regular stuff I have to do. I've had little time for much else. I was really tired for a few weeks, which makes everything hard, but I'm back up to speed now (mostly). I do have to take a daily nap, though, which I never used to do, but I have to say I am thoroughly enjoying them.

Soon after I went on those walks to the park, I got really sick with a bad cold. My husband is always joking with me that when I get sick, he can't even tell... I just go about life as usual. But this time, it hit me hard. I was down for several days, and then it still took a long time to get my energy back. So that was when I started thinking I might be pregnant. Even then, though, I REALLY didn't think I was... I was shocked when I saw that the test was positive... but in a really good way. We couldn't be happier and are feeling so blessed. God is so good and his timing is perfect.

My blog had to take a back seat, though, but I'm hoping to have more time for it now. There are so many things I want to post. Since life is so crazy right now, this blog is probably going to focus less on shopping/good deals (I rarely go shopping or read blogs anymore it seems) for now and more on my family and our busy life in general.
